How to Bake the Beloved Dark Chocolate Cake


  • 1/2 cup sorghum flour
  • 1/2 cup tapioca flour
  • 1/2 cup rice flour
  • 1 cup cocoa powder, sifted
  • 1 1/2 tablespoons xanthan gum
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 cup butter at room temperature
  • 3/4 cup (packed) dark brown sugar
  • 1 cup white sugar
  • 3 eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 1 1/2 cups buttermilk
  • 5 ounces chocolate chips
  • 1/2 cup sour cream
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon heavy cream

Steps to bake a Dark Chocolate Cake

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan and set aside.
  2. In a medium bowl, sift together the sorghum, tapioca, and rice flours with the cocoa powder, xanthan gum, baking powder, and baking soda.
  3. In a large mixer bowl, cream the butter until light and fluffy. Slowly beat in the brown and white sugars; whip until fluffy. Beat the eggs and egg yolks one at a time. Add the vanilla. On low speed, alternately combine the buttermilk with the flour mixture. Pour batter into prepared pan.
  4. Bake in preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan.
  5. To make the icing, in the top of a double boiler over medium-high heat, melt the chocolate chips (or use the microwave). Remove from heat and cool until warm. Stir in the sour cream and vanilla; add heavy cream. Stir in additional heavy cream to make desired consistency. Once the cake is thoroughly cool, spread a thin layer of frosting over the top.

  • Cook ahead. Prepare as much of the food as possible at home, so the cooks can enjoy the tailgate, too.
  • Plan simple food for the kids (burgers, hot dogs, even peanut-butter-and-jelly sandwiches).
  • Think non-breakable. Pack food in plastic or disposable containers with lids.
  • Bring extra. From utensils to paper towels and trash bags, you’ll need more than you think. Bring extra tables, too. There always seems to be more food than table space.
  • Take plenty of water, especially for early-season games. Frozen bottled water can substitute for commercial ice packs and provides cool drinking as the ice melts. Also, bring a jug of extra water for cleanup.
  • Use two coolers – one for food and one for beverages, so food doesn’t heat up every time someone reaches in for a drink.
  • Pack food in the order of use. Put items you’ll need last at the bottom of your cooler and those you’ll use first at the top.
  • Keep clean. Because soap and running water probably won’t be handy, take hand-sanitizing liquids and sanitizing wipes.

Prepare water/vinegar solution

Alright, before you do something with the coffee machine, it’s important to make up the water/vinegar solution (you can use citric acid or concentrated lemon juice instead of vinegar). You need to do this by mixing just one part vinegar(tiny bit of vinegar) with two cups of drinking water.

Clean outer surface

The next task is to apply your water – vinegar cleaning solution by using a white-colored fabric cloth to clean the coffee maker’s outer surface area and heating unit. Once you apply solution outside the coffee machine, allow it to stay for 20 minutes

Place the Mixture In the Coffee Maker

Now, it’s important to put the combination into your coffeepot, being confident that to totally fill it up. Place the fine mesh filter into position.

Lemon-Rasberry Touchdown Bars


  • 2      16.5 ounce packages lemon bar mix (Betty Crocker)
  • 6      beaten eggs
  • 2/3   cup water
  • ½     teaspoon ground cinnamon
  • 1      cup or 12-ounce jar red raspberry preserves (seedless preferred), melted*
  • ½     cup shredded coconut
  • ½     cup premium white chocolate baking pieces
  • ½     cup finely chopped pecans or walnuts


  1. Preheat the oven to 350 F. In a large bowl, combine the eggs and water. Stir in the 2 lemon filling mixes; set aside.
  2. In a medium bowl, combine the 2 crust mixes and cinnamon; reserve ½ cup of the dry mix for the topping. Press the remaining crust mixture evenly into the bottom of a 13x9x2-inch baking pan. Bake for 10-12 minutes (crust will be pale).
  3. Remove form oven. Immediately spoon melted preserves over the top of the hot filling. Using the back of a spoon, spread preserves evenly. Stir lemon filling again. Pour lemon filling over raspberry preserves.
  4. For topping: Stir together the reserved ½ cup of dry crust mix, coconut, white chocolate pieces and pecans; sprinkle over lemon filling.
  5. Bake in the middle of the oven for 30 to 35 minutes or until the top begins to lightly brown and the center appears set. Cool completely in the pan on a wire rack. Cover and chill for at least 1 hour before cutting into bars (using a wet knife makes the cutting easier). Cover and tote.

*To melt: Warm in a small saucepan over medium-low heat for 2 to 3 minutes.
